Recipe: Vibrant Quinoa Salad


  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup crumbled feta cheese
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Cook Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  2. Prepare the Vegetables: While the quinoa is cooking, chop the cherry tomatoes, cucumber, bell pepper, avocado, red onion, parsley, and mint.
  3. Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Combine Ingredients: In a large bowl, combine the cooked quinoa, chopped vegetables, and herbs. Pour the dressing over the salad and toss to coat.
  5. Serve: Transfer the salad to a serving bowl. Top with crumbled feta cheese and a wedge of lemon.
